THE Peanut Butter Cookie Recipe for A Gluten Free Diet

I really truly believe that the best way, maybe the only way, to stick with a completely gluten free diet is to always have some gluten free food that you like on hand. Now, that may sound too simple, but think about it.

What happens if you are starving or you're in a hurry or late or tired or whatever? You convince yourself, "What can it matter if I have just one? I know it's not gluten free but it's just this one time." That's the slippery slope. It gets easier and easier to cheat.

So here's the solution.

North Americans may recognize this recipe from the Kraft peanut butter jar. It's the recipe with no flour. No other fancy ingredients. You just have to make sure the peanut butter is gluten free. Could it get any simpler?

These are really delicious as well as being simple. You can make these cookies all kinds of different ways to match your taste and add variety.


Yummy Peanut Butter Cookies

Ingredients:
1 cup peanut butter (smooth or crunchy)
1/2 cup sugar
1 egg, lightly beaten

One Bowl Method:
Use a wooden spoon to mix all ingredients together well.

Take one teaspoonful of dough at a time and roll it into a ball.

Flatten with a fork on an ungreased cookie sheet.

Bake for 15 min. in oven preheated to 325 F.

Variations: add 1/2 cup of raisins, nuts, dried cranberries, white or semi-sweet chocolate, or anything else that tickles your tastebuds.

CAUTION: they do tend to burn so watch carefully.

P.S. Another reason I like this recipe is that these cookies are filling, and not just from sugar. The peanut butter really does stick to your ribs so you feel satisfied!

P.P.S. These freeze just fine and I've learned this is a good way to control how many I eat. I just put out one at a time!!
